This new place on the culinary map of Zakopane immediately set a sky-high bar for the competition. The Brasserie Roots restaurant is located at the Radisson Blu Hotel & Residences. Their chef follows a philosophy of returning to culinary roots – locally sourced products, many of which have become a bit obscure over the years. The menu has them appearing in both leading and supporting roles. When combined, they are transformed into harmoniously composed dishes, strongly rooted in the traditions of the Tatra Mountains, but given a new life, often in a surprising form.
